WHere is an easy version of a cocktail featured on a new cocktail list. This is a batch premix that's packed with the flavours of a holiday season, making it excellent for hosting a celebration. Any leftover cordial for morning drinks, desserts, or to mix additional servings of bikinis.
The Bikini Cocktail
Yields 10 people
Ingredients for the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Premix (makes 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
Making the Cordial: Combine the listed components into a pot, heat until it reaches a light boil, stirring to dissolve. After that, take off the stove and leave to cool fully. Decant to a sealable bottle, seal and refrigerate it in the fridge, it can be stored for about one month.
Preparing the Cocktail Base: Combine all the liquids in a sizeable container, let it rest for 60 minutes, then filter it preferably using muslin, so it's completely strained.
To serve: Add 85ml from the batch mix to a stirring glass filled with ice, and agitate carefully for one minute to cool it down. Filter into a cold coupe glass or a similar vessel, garnish with some cranberries and finish by giving it a quick spritz of mandarin oil over the top.
